Louisiana-style Chicken Curry

This is based on a recipe from Chef Paul Prudhomme's Louisiana Kitchen. The main difference is that my version is much lower in fat (Paul calls for two sticks of butter, plus two tablespoons chicken fat, plus an optional four tablespoons additional butter!). The curry has a delicious blend of sweet fruit and hot peppers. It's definitely worth the chopping and long cooking time (45+ minutes). Step 1 : Prepare the first seasoning mix, by combining: • 2 tablespoons curry powder • 1 teaspoon ground red pepper (such as cayenne) • 1/2 teaspoon ground cumin • 1/2 teaspoon ground cinnamon • 1/2 teaspoon ground turmeric • 1/2 teaspoon ground black pepper • 1/2 teaspoon dried basil • 1/4 teaspoon ground coriander Set aside. Step 2 : In a 4 quart pan combine • 2 chopped onions (about 3 cups) • fresh minced hot pepper (5 tablespoons jalapenos OR 1 habanero) • 1 stick of butter or margarine • the seasoning mix (step 1) Cook over high heat until the butter melts (about 5 minutes), stirring ...

Remember the Woody Allen movie, Sleeper ? The health food-loving hero is frozen, and wakes up hundreds of years in the future, only to find that he was all wrong about junk food. Dr. Melik: [puzzling over list of items sold at Miles' old health-food store] ... wheat germ, organic honey and... tiger's milk. Dr. Aragon: Oh, yes. More on the Esperanza Fire

This morning's LA Times had a great map showing the steep terrain the fire fighters are having to deal with in fighting the Esperanza fire. Read the whole article . (may require free login or bugmenot) The Riverside County Sheriff's department is asking the public for tips on the possible arsonists, and officials are "seeking a $100,000 reward for information". (I take it that they haven't yet come up with the money, but they are trying). Also, from the Press-Enterprise : Injured firefighter Pablo Cerda and possibly others are going to need significant amounts of blood and plasma transfusions, and donations may be urgently needed.
