Louisiana-style Chicken Curry

This is based on a recipe from Chef Paul Prudhomme's Louisiana Kitchen. The main difference is that my version is much lower in fat (Paul calls for two sticks of butter, plus two tablespoons chicken fat, plus an optional four tablespoons additional butter!). The curry has a delicious blend of sweet fruit and hot peppers. It's definitely worth the chopping and long cooking time (45+ minutes). Step 1 : Prepare the first seasoning mix, by combining: • 2 tablespoons curry powder • 1 teaspoon ground red pepper (such as cayenne) • 1/2 teaspoon ground cumin • 1/2 teaspoon ground cinnamon • 1/2 teaspoon ground turmeric • 1/2 teaspoon ground black pepper • 1/2 teaspoon dried basil • 1/4 teaspoon ground coriander Set aside. Remember the Woody Allen movie, Sleeper ? The health food-loving hero is frozen, and wakes up hundreds of years in the future, only to find that he was all wrong about junk food. Science Fun

It's time for another round of the AW Blog Chain ! In the last post, Kelly wrote about kids who make a difference in the world by trying to improve literacy in their communities. Fantastic! I hope more kids find out that reading can be both fun and rewarding. I'd like to suggest that science literacy is as important as reading literacy (literary literacy?). Of course the two go together - a kid with poor reading comprehension is going to have a tough time in all subjects. A problem, though, is that a lot of people think that science is boring or only for geeks or for boys*. Au contraire! Science can be fun. Now, there are lots of computer programs, and web sites and books that are designed to teach science to kids. Personally, I think hands-on learning is much more fun.
